White Bean & Pepper Salad
I am very fortunate to live in farm country next to our good friends Wayne and Cheryl who grow white navy beans and even luckier to be gifted some of their freshly dried beans every year. This salad is a gorgeous way to use those beans with brilliantly coloured peppers and the deep flavour of the garlic, prosciutto and asiago cheese. When making this salad I simply rehydrate some beans using my Instant Pot. If you don't want to rehydrate beans you can use canned, rinsed navy or white kidney beans but the flavour is superior using freshly rehydrated beans.
Ingredients
- 2 cups navy beans I rehydrate dried navy beans using my Instant Pot
- 1 green pepper rinsed seeded and cut into chunks
- 1 red pepper rinsed seeded and cut into chunks
- 1 yellow pepper rinsed seeded and cut into chunks
- ½ red onion or 2 shallots diced
- 2-3 cloves garlic minced
- ¼ cup freshly squeezed lemon juice from about 1 large lemon
- 6 ounces prosciutto chopped
- 6 ounces asiago cheese about ¾ cup cubed
Instructions
- Toss all the peppers, garlic and onion together. Add the beans.
- Drizzle on the lemon juice.
- Add the cheese and prosciutto and toss together. Serve at room temperature or chilled.
