Winter Fruit Salad

My mom was all about making after school snacks convenient and this salad was a winter staple when I was a child. It is so simple to put together that it is hardly a recipe but I wanted to share it as a reminder that a healthy fruit snack can be prepared days in advance and can be enjoyed all week long. Simply cut up grapefruit, oranges, apples, bananas add some diced pineapple canned or fresh and then soak with pineapple juice or a low sugar tropical fruit juice blend.

Ingredients
  

  • 2 large grapefruit peeled, segmented and cut into 1" pieces. I prefer using the red grapefruits for this salad
  • 4 medium oranges peeled, segmented and cut into 1" pieces.
  • 3 medium apples rinsed, cored, sliced and cut into chunks
  • 2 large bananas peeled and sliced
  • 2 cans diced pineapple or half of a fresh pineapple peeled, cored and diced.
  • 1 960 ml carton pineapple juice or low sugar tropical fruit juice

Instructions
 

  • Add all the sliced fruit to a large bowl and then pour the juice on top. Cover the bowl with a lid and store the salad in the fridge for up to a week.
  • If you choose to use the low sugar tropical fruit juice, let the fruit sit in the juice for 12 hours before serving. I find that the flavour of the fruit will infuse this juice with more flavour when left for the 12 hours.
