Stained Glass Angels
I remember when my children were young; they would get so excited when we would make these cookies. Miraculously, they would memorize which masterpieces were theirs, and when the cookie box came out, they would eagerly dig through it until their treasured cookie was found. Enjoy starting a new magical tradition with your loved ones this Christmas by making these beautiful, intriguing delights!
Equipment
- 2 baking sheets
- tin foil
- pastry cutter
Ingredients
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ¾ teaspoon baking powder
- ½ teaspoon ground nutmeg
- â…” cup (3 oz)(85g) cold butter cut up into cubes
- 1 large egg slightly beaten
- 2 tablespoons milk
- 1 cup clear hard candy crushed but not too fine. We use clear lollipops and crush so that the pieces are about the size of your pinky thumbnail.
- optional: icing sugar
- optional: edible glitter
Instructions
- Mix the flour, sugar, baking powder and nutmeg and then cut in the butter. Whisk the egg and milk and add to the flour mixture. Knead until combined.
- Chill for up to 2 hours so that the dough is not tacky and easy to roll.
- Line two cookie sheets with tin foil. On a floured surface roll the dough â…›" thick. Cut out the angel shapes. Transfer the shape to the prepared tin foil lined baking sheet, placing the cookies 1" apart. Using a small cookie cutter cut a shape in the centre of the cookie.
- Fill the centre cut-out with the chopped candy.
- Bake the cookies in a 375°F oven for about 7 minutes. Cool the cookies for 5 minutes on the pan and then carefully, using a spatula, transfer to a wire baking rack to cool completely.
- When cool, you can pipe on some icing and add edible glitter.
Icing sugar:
- option 1: Mix 1½ cups of confectioners' sugar, ¼ teaspoon of vanilla and enough milk to make a piping consistency (1½-2 tablespoons).
- option 2: Mix 1½ cups of confectioners' sugar, 2½ tablespoons of meringue powder, ¼ teaspoon of vanilla extract and 2-3 tablespoons of water (or omit the vanilla and water and use strained fresh lemon juice.) This is the icing I use when I am gifting these cookies.
