Easy Sugar Cookies
Every Christmas, I ask my family which cookies they want me to make, and well, this traditional cookie always makes it to the top of my husband's list. I love making them because the dough rolls out, without fail, every time. They also look fabulous, simply decorated with just a sprinkle of colourful sanding sugar. Keep an assortment of seasonal cookie cutters for use with this dough because these cookies are great any time of the year!
Equipment
- 2 baking sheets
- optional: parchment paper
- hand-held or stand mixer
Ingredients
- â…“ cup shortening
- â…“ cup unsalted butter
- 2 cups all-purpose flour
- ¾ cup sugar
- 1 large egg
- 1 tablespoon milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 pinch table salt
- optional: sanding or decorating sugar
- optional: icing sugar
Instructions
- To a large bowl, add the butter and shortening beat with an electric mixer for 30 seconds or until softened.
- Add half of the flour, sugar, egg, milk, baking powder, vanilla and salt. Beat until fully combined, scraping the sides of the bowl down as needed. Add the rest of the flour and mix until combined. Divide the dough in half, cover and chill for 3 hours or until easy to handle.
- On a lightly floured surface, roll the dough until it is â…›" thick. Use cookie cutters to cut out shapes. Transfer the cookies to the baking sheets and then lightly sprinkle with the coloured sanding or decorating sugar.
- Bake in a 375°F oven for 6-7 minutes or until the bottoms of the cookies are slightly brown. Cool for one minute on the sheet and then transfer to a wired baking sheet to cool completely.
- Store at room temperature for one week or place in the fridge or freezer for longer storage.
Notes
To make powdered icing sugar: Stir 1 cup of icing sugar, ¼ teaspoon vanilla and about 1 tablespoon of milk. Tint with food colouring if desired.
I like to make these cookies with a sprinkle of two colours of decorating sugar. For easy clean up I line the baking sheets with parchment paper.
