Here is a great way to use up tomatoes anytime your garden is producing tomatoes like 90. You can roast any variety of tomato with this recipe, but the size will determine whether you leave them whole or cut them in half and the temperature at which to cook them. These roasted tomatoes are excellent on sandwiches, pizza or in a savoury quiche or cottage cheese pie. So don't be so quick to give away all your tomatoes at the end of the season! Once you make this recipe, you will be hoarding that tomato surplus and enjoying roasted tomatoes all year long!

Equipment

  • rimmed baking sheet
  • tin foil

Ingredients
  

  • 3-5 lbs ripe tomatoes any variety will work
  • 2 tbsp olive oil for drizzling
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • 1 tsp dried oregano or substitute dried thyme
  • optional: whole peeled garlic cloves I use 5-6

Instructions
 

  • Line your rimmed baking sheet with tin foil and drizzle with olive oil.
  • If using cherry tomatoes, leave whole and if using any other variety of tomato, slice in half.
  • Drizzle tomatoes with olive oil and sprinkle with kosher salt, ground black pepper, oregano or thyme. If using, add the whole garlic cloves.
  • For cherry tomatoes, roast in a 275°F oven for 3-4 hours or until they have burst and the liquid has mostly evaporated. Check them every 20 minutes because the total roasting time will be dependent on the type and size of the tomato. For larger tomatoes start to cook them in the oven at 300°F and roast for 2 hours. Drop the temperature down to 275°F and roast for an additional 2-3 hours or until the desired consistency is achieved.
  • Remove from the baking sheet and transfer to a low casserole dish. Cool completely before refrigerating or freezing.

Notes

If you have a dehydrator, after 2-3 hours you can transfer them to the dehydrator. The advantage of using the dehydrator to finish the process is that you can dehydrate the tomatoes a lot dryer without worry of burning them.
