This salad is a healthier version of a broccoli cheese salad, featuring fresh broccoli, kale and grapes. Simple and easy to put together and versatile in that you can vary up the remaining additions depending on what you have on hand in the house. It is great with roasted sunflower seeds, pepitas or toasted nuts, dried cranberries, raisins or chopped dried apricots. Add some grilled salmon or chicken breast on the side and your healthy meal is complete!

Ingredients
  

To prepare the kale:

  • 4 cups curly kale rinsed, stemmed and chopped into small pieces
  • 1½ tbsp lemon juice freshly squeezed

Remaining salad ingredients:

  • 4 cups broccoli cut up small into florets
  • 2 cups red seedless grapes rinsed and cut in half
  • 1 cup red onion chopped fine
  • ¾ cup dried cranberries
  • ½ cup pepitas and or ½ cup sunflower seeds

The dressing:

  • 1 cup plain yogurt vanilla yogurt works fine too
  • 1 tbsp honey
  • ¼ tsp ground nutmeg ground fresh is excellent but pre-ground works fine too

Instructions
 

  • Add the kale to a large bowl. Drizzle the lemon juice on the kale and if desired, rub the juice into the kale. This will soften the kale.
  • Add the remaining salad ingredients.
  • Mix the yogurt with the honey and nutmeg. Pour over the salad and mix well.
