Pretty in Pink Beet Side Dish
I love serving this dish to brighten my dinner table. It is especially nice to serve when there is not as much variety in my harvests and the colours of the garden have faded. It is so simple to prepare that it is hardly worth writing it as a recipe, except to be a reminder to make it.
Ingredients
- 3 large beets peeled and grated
- 2-3 tbsp butter or margarine
- 2-3 tbsp sour cream
- salt and pepper
Instructions
- Heat the butter in a medium saucepan until frothy, stir in the grated beets. Lower the heat to simmer and cover the pan. Simmer for 8 minutes.
- Remove the lid and add the sour cream. Gently mix and season with salt and pepper.
Notes
The beets can be grated in advance and stored in the fridge for up to one day.
