Apple Arugula Brie Sandwich
Every spring I eagerly wait for my arugula in my garden to be ready to pick so I can make this open-faced sandwich. This sweet and savory combination of flavours will tantalize your taste buds and perhaps persuade you to add arugula to the vegetables you annually plant in your garden. The sandwich is quick and easy to make but will surely impress guests.
Ingredients
- 4 slices sourdough bread
- 1-2 cups fresh arugula
- 4 tbsp Dijon mustard
- 1 Granny Smith apple, sliced thin
- 8 slices brie
Instructions
- Place your oven rack to the highest setting and set your oven to broil.
- Place the slices of bread on a baking sheet and put them in the oven. Broil until lightly toasted, about one minute.
- Remove the bread from the oven and spread one tablespoon of Dijon mustard on one side of each slice.
- Equally distribute the arugula on the slices of bread. Top that with the apple slices and then with the brie slices.
- Return the sheet with the sandwiches to the oven and broil until just starting to melt. (30 seconds-1 minute)
- Remove from the oven and serve.
