An awesome nut-free cookie that you can bring to any event! My good friend Patti shared this recipe with me over 10 years ago and even though I make dozens of different types of cookies every year, this one is still a staple. I like to use whole wheat flour and the brand Wow Butter. The flavours complement one another and the whole wheat adds more texture to the cookie than all purpose. It is a small batch cookie recipe which means it bakes up quick, but be warned, you might want to double the recipe because these golden treats get scooped up fast!

Equipment

  • 2 baking sheets
  • parchment paper
  • KitchenAid stand mixer or hand mixer

Ingredients
  

  • 1¼ cups whole wheat or all purpose flour (I prefer whole wheat flour)
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter
  • ½ cup soynut butter
  • ½ cup granulated sugar
  • ½ cup brown sugar , packed
  • 1 large egg
  • ½ tsp vanilla extract

Instructions
 

  • Line two baking sheets with parchment paper and preheat your oven to 375°F.
  • Combine the butter, soynut butter and sugars in a large bowl and beat the mixture on high for 1 minute. Stop beating the mixture a couple of times to scrape down the sides of the bowl to incorporate all the mixture.
  • Add the egg and vanilla and beat on high until well mixed, about 1 minute.
  • Combine the flour, baking soda and salt in a medium bowl and then add all at once to the butter mixture. Mix until well combined.
  • Scoop the dough and roll into 1" balls. Place them on the parchment-lined baking sheets.
  • Using a floured fork, flatten the balls with a criss crossed pattern. (Flatten to a little less then ½" high.)
  • Bake in a 375°F oven for 10 minutes. You can rotate the pan halfway through the baking time if your oven does not bake evenly.
  • Cool on a wire rack and store at room temperature in a covered container for a week or freeze up to a month.
