My mom was all about making after school snacks convenient and this salad was a winter staple when I was a child. It is so simple to put together that it is hardly a recipe but I wanted to share it as a reminder that a healthy fruit snack can be prepared days in advance and can be enjoyed all week long. Simply cut up grapefruit, oranges, apples, bananas add some diced pineapple canned or fresh and then soak with pineapple juice or a low sugar tropical fruit juice blend.

2cansdiced pineappleor half of a fresh pineapple peeled, cored and diced.
1960 ml cartonpineapple juiceor low sugar tropical fruit juice
Instructions
Add all the sliced fruit to a large bowl and then pour the juice on top. Cover the bowl with a lid and store the salad in the fridge for up to a week.
If you choose to use the low sugar tropical fruit juice, let the fruit sit in the juice for 12 hours before serving. I find that the flavour of the fruit will infuse this juice with more flavour when left for the 12 hours.
