Double Chocolate Pudding
If you are going to make chocolate pudding, go all the way! Rich, dark bittersweet chocolate, cocoa and the makings for a nice silky custard come together in this recipe, creating the perfect chocolaty treat. So, the next time you are craving a chocolate, reach for that pot, grab that whisk, and in less than 15 minutes enjoy your pudding!
YIELD : 6-8 ounce servings
Equipment
- 3-litre saucepan
Ingredients
- 6 tablespoons unsweetened cocoa powder
- â…“ cup granulated sugar
- 3 tablespoons cornstarch
- ¼ teaspoon salt
- 3 cups milk
- 4 egg yolks
- 3 ounces bittersweet chocolate substitute dark chocolate or milk chocolate
- 2 tablespoons unsalted butter
- 1 tablespoon pure vanilla extract I have left this out and it still turns out but if added you will get a much richer flavour
Instructions
- Combine the cocoa, sugar, cornstarch and salt in a heavy 3-litre saucepan.
- Whisk in one cup of the milk to dissolve the dry ingredients.
- Whisk in the egg yolks and remaining milk.
- Set the pan over medium heat and cook, stirring constantly, until the pudding begins to thicken and just comes to a boil (Should take about 6 minutes.)
- Remove from heat and add the chocolate, butter and vanilla. Let stand for 2-3 minutes, then stir until the mixture is smooth.
- Pour into six 8-ounce serving dishes and serve warm.
- Alternatively, pour the pudding into a bowl and cover the pudding with cellophane. Poke some holes in the cellophane and cool. Move to the refrigerator and chill for 2 hours.
- Stir, and then spoon into six 8-ounce serving dishes.
Notes
For a mocha flavoured pudding, add in 1 tablespoon of instant expresso powder to the dry ingredients. Follow the rest of the recipe as stated.
