Finnish Oven Pancake
I am so lucky to have such a large extended family and, even though we are spread all over, Canada we manage to stay in touch and share recipes! This is a family recipe shared by my Aunt Rita who is as Finnish as they come. I adore her stories and laughter every time we get a chance to catch up. I like this take on the Finnish pancake because it is quick and easy to put together, and because they are cooked in two cast-iron frying pans in the oven no one is standing at the stove flipping. This is the Finnish take on the German pancake and my tradition for serving it is topped with a wild northern Ontario blueberry sauce.
Equipment
- 2 -10" or 12" cast iron frying pans
Ingredients
- 1 cup milk
- ½ cup flour
- 2 tbsp sugar
- ¼ tsp salt
- 3 whole eggs
For cooking:
- 2 tbsp unsalted butter
Instructions
- Preheat oven to 425°F.
- Beat eggs in a large bowl until well beaten and fluffy. Add the milk, flour, sugar and salt beating continuously.
- Add a tablespoon of butter to each cast-iron pan and put them in the oven to heat up and melt the butter.
- Once the butter is melted, divide the batter between the two pans and bake in the oven for 15-20 minutes. Keep a good eye on the pancake to make sure it does not burn.
- Served hot with additional butter and maple syrup or top with berries or berry sauce and whipped cream.
