Guacamole is one of my favourite condiments and because I make it so often I mash and freeze avocados with lime juice so that I can quickly put it together. Guacamole can be made simply with avocado, fresh or bottled lime or lemon juice, garlic, salt and pepper or you can add more flavour and texture by adding in some freshly chopped cilantro, parsley and seeded tomatoes and jalapenos.
1tablespoonfresh lime juice (usually from one lime)substitute bottled lime juice or lemon juice if desired
1cupfresh cilantrochopped or substitute fresh parsley
¾cuptomatoesseeded and diced
2clovesgarlicminced
1½jalapenosseeded and minced or substitute ½ teaspoon of hot chili flakes.
½teaspoonsaltadd more salt to taste if desired
¼teaspoonpepper
optional: ½ cup of minced red onion
optional: olive oilto add if needed to store in the fridge for more than 2 hours.
Instructions
Combine all the ingredients in a medium bowl. Taste and add additional seasonings if desired.
When you make it in advance you will want to minimize oxidation (browning of the avocado). Cover the top of the guacamole with a thin layer of olive oil and tightly cover the bowl with cellophane. This will minimize the amount of air touching the surface of the avocado and thereby minimizing oxidation. You can keep the guacamole fresh like this in the fridge for 2 days. For longer storage, vacuum seal.

If you find avocados on sale pick them up and mash them with lime juice, vacuum seal and freeze for up to four months. (5 large avocados mashed will require about 2 tablespoons of fresh lime juice. Divide the mash into 1¾-2 cup portions.)
