Here is an easy but satisfying dish that is in the category "set it and forget it." A great comfort food that cooks while you can go about your busy day because it is done in a slow cooker. The boneless chicken thighs, mushrooms, onions and garlic form the perfect base for a delicious main that can be served over egg noodles, fettuccine, mashed potatoes or rice. So the next time you want a no fuss but a fantastic meal to serve the family or friends try this easy dish.
¾cupwhite wineyou can omit this if you don't have it on hand
2tablespoonsgrainy mustard
2teaspoonspaprikasweet not smoked
1cupsour creamfull fat
½teaspoonsalt
½teaspoonpepper
Additional optional ingredients:
2tablespoonsparsley chopped
1mediumlemoncut into wedges, for a squeeze of lemon
Instructions
Put the chicken thighs in the slow cooker.
In a non-stick frying pan or heavy bottomed pot melt the butter and add the onions and mushrooms. Sauté for 5 minutes.
Add the minced garlic and sauté for one additional minute.
Transfer the onions, mushrooms and garlic to the slow cooker. Add some broth to the pan and scrape up any bits, then add this to the slow cooker as well.
Add the rest of the chicken broth, wine (if using), mustard, paprika and salt and pepper. (You will add the sour cream in the last 20 minutes of cooking.)
Cook on low for 4 hours. Mix in a cup of the cooking liquid into ¼ cup of flour and whisk to combine. Add to the slow cooker and stir to combine. Continue cooking for up to another 2 hours.
Add the sour cream near the end of the cooking time and cook for an additional 20 minutes.
Serve over buttered egg noodles, fettuccine, mashed potatoes or rice.
For extra flavour, add a sprinkling of chopped fresh parsley and/or a squeeze of lemon.
