It wasn't uncommon for me when I was a teenager to dump my books at the door after school and get in the kitchen to make this yummy treat. And even now, many years later, it is still one of my favourite ways to bake with apples. This recipe can be made simply using just apples, or with pears, or with the addition of cranberries or raspberries. Keep frozen fruit on hand so that this easy treat can be prepared quickly. Savour this recipe as a dessert or for breakfast, warmed with a pour of cream. It will surely warm the soul!
8cupsapplespeeled, cored and sliced or substitute pears
1cupcranberriesor substitute raspberries
⅓cupgranulated sugar
2tbspbrown sugarcan omit if just using apples and or pears
2tbspflour
2tspcinnamon
Topping:
2cupsquick-cooking rolled oats
½cupbrown sugar
1½tspcinnamon
⅓cupbuttermelted
Instructions
Preheat oven to 350°F.
To a large bowl, add the flour, sugars and cinnamon. Stir to combine.
Add the apples, cranberries (or other fruit) to the flour mixture and stir. Set aside for 5 minutes or until some of the liquid has released from the apples. Stir again so that all the fruit is coated with the flour mixture.
Put the apple mixture into the 2-litre dish.
Combine the topping and sprinkle over apple mixture.
Bake uncovered in a 350°F oven for 55 minutes. Serve warm or cool.
Notes
This crisp is really good with apples and raisins as the filling. When I make it this way, I add 1 tablespoon of pure maple syrup to the topping and reduce the melted butter down to ¼ cup.
